PRESERVING HISTORY

St. Nicholas Abbey has a long tradition of producing rum, a spirit Barbados has claim on discovering in the 17th century, when plantation workers began experimenting with fermenting molasses into alcohol. Initial batches were not known for their quality; in fact early Barbadian rum was referred to as ‘Kill-Divil…a hot, hellish, and terrible liquor.’ Over time, distillation practices significantly improved and Barbadian rum became renowned in both Europe and Colonial America.

Since purchasing St. Nicholas Abbey in 2006, the Warren family has meticulously restored the property to its original splendour. With its significant importance in Barbadian history as one of the last surviving and intact 17th century plantations on the island, it is their mission to develop St. Nicholas Abbey as a self-supporting plantation in order to sustain this exceptional legacy for future generations. As part of this vision, the Warrens have created a cottage industry of sugar-related products, spearheaded by its signature offering, St. Nicholas Abbey Rum.

One of just four distilleries in Barbados, the Plantation has shunned mass production and complex mechanical systems in favour of the traditional distillation process that made Barbadian rum famous over 350 years ago.

DISTILLATION PROCESS

 

The Freshest Cane

The Plantation cultivates and harvests by hand a select variety of pesticide free sugar cane unique to St. Nicholas Abbey. The freshly cut cane is hand-fed into the steam mill where it is crushed just once to extract the juice. The juice is then fed directly into the fermentation pots to ensure premium freshness and quality.

Pot Still Distillation

One of the few distilleries of its kind, St. Nicholas Abbey has shunned mass production. After fermentation, the cane juice is distilled in small, carefully-controlled quantities using the traditional batch still process. The pot still, customised to St. Nicholas’ specific requirements, produces a superior spirit worthy of the plantation’s heritage and pedigree.

Aged to Perfection

The spirit is barrelled in the finest bourbon oak casks and aged to perfection in the plantation’s own rum bond. St. Nicholas’ highland location benefits from cooling tradewind breezes that further aid in the ageing of the rum.

From Barrel to Bottle

Our 15 year old aged rum is hand-bottled unblended straight from the barrel in an elegant glass decanter individually etched with an image of the St. Nicholas Abbey great house. The decanter is sealed with a mahogany cork topped with hand-embossed leather. The label is applied by hand and each decanter is engraved with both a number and date.

PRODUCTS

10 & 15 YEAR OLD AGED RUMS

Our premium 15 year old rum is aged in oak barrels, producing a complex fruity spirit with a smooth finish. The rum is then hand-bottled unblended straight from the barrel in an elegant glass decanter individually etched with an image of the St. Nicholas Abbey great house.

The decanter is sealed with a mahogany cork topped with hand-embossed leather, symbolic of the island’s first mahogany trees, planted on Cherry Tree Hill over 250 years ago. The label is applied by hand and each decanter is engraved with both a number and date.

 

WHITE RUM

Our white rum is made from sugar cane grown on the Estate which is crushed in the 1890 steam mill, creating syrup commonly known as ‘sugar cane honey’.  This syrup is then fermented in the pot still, producing the original Barbadian ‘see-through’ rum of years gone by, a sweet and sugary spirit with a fresh, clean nose of marshmallows, coconut and vanilla.

St. Nicholas Abbey's White Rum was awarded Best Boutique Rum at the 2012 Rumfest in London, UK. and was also awarded the Bronze Medal at the 2012 International Wine and Spirits Competition in London, the highest medal awarded in its category. The White Rum is now available for purchase at the plantation in Barbados; it can also be purchased online.

RECOGNITION

In 2012, St. Nicholas Abbey returned to London’s annual RumFest for its fifth consecutive year, having first showcased its premium rum at the event in 2008. Hosted at the Excel Centre in October 2012, RumFest is the world’s premier rum exhibition, providing the ultimate rum experience for thousands of enthusiastic aficionados and participating trade members.

St. Nicholas Abbey shone at the 2-day exhibition, culminating with outstanding success at the Golden Barrel Awards & Dinner, winning both Distillery of the Year 2012 and Best Boutique White Rum. These prestigious awards reflect the Estate’s passion for quality and its mission to create uniquely premium artisan rums. The Warren Family, owners of St. Nicholas Abbey, are encouraged by the award for Best Boutique White Rum, a product that has only recently been brought to market.  It was also awarded the Bronze Medal at the 2012 International Wine and Spirits Competition in London, the highest medal awarded in its category.
